Bake potatoes in an air fryer for a quick and crispy side dish, brushing with olive oil, seasoning, and cooking at 400°F for 50-55 minutes for medium potatoes, and piercing them beforehand to prevent splitting.

Directions

  1. Puncture each potato with a fork 3 to 4 times.
  2. Using a pastry brush, evenly coat each potato with olive oil. Season with salt and pepper.
  3. Arrange the potatoes in the air fryer basket with some space between them.
  4. Air fry at 400°F for 30 minutes. Flip the potatoes and continue cooking for 20 to 25 minutes until tender.
  5. Remove the potatoes from the air fryer and let them cool for 5 to 10 minutes.
  6. Slice a thin piece from the top of each potato. Fluff the insides with a fork. Garnish each with butter and chopped chives.
